spiral dough mixer

item received on time was sent 2 day fed ex. mixer arrived in wood crate well protected foam inside. mixer is heavy 80 lbs . I am a hobby / home pizza /bread maker was looking at spiral mixers costing 4 times the amount figured for the cost of this mixer I'd give it a try. so my first mix was 1500g of flour/with biga at 70% hydration mixer handled it very well.machine was not noisy ran smoothly was very happy with results . cleaning was easy as soon as dough was removed I cleaned it out with damp towel wiped dry. I would recommend this mixer from first impressions / use. if I can I will re visit this review in year. hope it lasts

The best dough mixer that I have ever used. Well worth it. Recommend it. Find it extremely helpful when mixing large quantities of pizza dough.

Home pizza chef dream
It's a beast. I purchased it specifically to compliment my newly constructed wood oven to assist in making stronger pizza bases. There's no other style of mixer that can knead dough like a spiral mixer and this is the cheapest mixer you can buy. You may find second hand commercial mixers BUT you need to be wary of the size and weight of some of these commercial ones. It's not uncommon to find them in excess of 80kg. This one is around 35kg but I've never weighed it which means it's quite heavy to move around will most likely occupy a permanent place on your bench. It's not going to live in your corner cupboard and come out occasionally as you wont get it in and out. My wife nearly dropped it trying to move it from the kitchen bench to the floor and she's quite fit and reasonably strong. Cleaning the unit is no issue. I was worried about not having a removable bowl but the final dough that comes out is so incredibly sticky that nearly all of it has come out on its own and you can wipe the rest out with a rag in about 2 minutes. I found claims online that this unit mixes too fast. I can't speak to it being much of a problem but the dough is reasonably warm after 15-18 minutes of mixing unless you use chilled water from the fridge or throw a few ice cubes in. I've now used the mixer on four separate occasions and found it's really well sized to do 12 balls of dough at once with a weight of 270g per ball. It doesn't feel like it's struggling to do it so you could probably push more in it but dough ball trays fit 12 balls nicely so it's a good size to work with. I was using a recipe derived from Vito Lacopelli's youtube videos which involved a poolish mix and 65% hydration and was very happy with the results. A typical batch looks like: Poolish: 383g water, 383g flour, 6g yeast, 6g honey. Mix and let stand for 1 hour on the bench and then 24h in the fridge. Next day: Add 1581g flour to the mixer, 51g of salt, then the poolish from the fridge and then mix about 80% of 893g of water, reserving the final 20% of the water for mixing directly onto dry patches of flour at the base of the bowl while it's mixing to help it pick up faster. I put it through its paces for a party and made 108 dough balls in 9 consecutive batches back to back. The unit never complained but you can smell the grease on the chain warming up and the switches on the side were warming up too. It's probably not designed to be used commercially (and you wouldn't with such a small bowl) but it handled the task perfectly and would happily do it again. If you were on the fence about getting a mixer for your oven and weren't sure if this was the right one, or if you're spending too much money, etc. Just know that you cannot find anything cheaper or smaller and this thing is perfect for your house.

Vevor One Speed 8L Spiral Mixer
7,6 L
My only complaint about the Vevor 8L spiral mixer is that it's only one speed, and that speed is somewhat rigorous at a bowl speed of 21rpm and a hook speed of 159rpm. The problem is that mixing at the speed that this mixer is designed to use will cause your dough to heat up faster than if a person were able to initially mix dough at a lower speed. But this is not a deal breaker. I've made some great pizza dough with this mixer. The key is to use a thermometer to check the dough temperature while mixing. When the temp gets too high (78deg. for me) I have to stop the mixer and let the dough rest, which is not necessarily a bad thing. This only means that it will take a little longer for the mixer to create the classic pumpkin ball. I would have liked to see a 2 speed version of this mixer, a low speed, and the current speed would do nicely. To me, that ability would have been worth perhaps $50 more. I'm totally ok, especially given the price of this mixer, but I'm just a weekend warrior. However, I don't believe that this is a mixer for professional bakeries unless they're just starting out and are working on a tight budget. Professionals are going to want multi-speed or continuously variable mixing speeds. But again, for the home cook that's doing a few pizza parties per year, this mixer will do fine as long as you understand the limitations of only having the one speed.

Great mixer for the price

Mine came with a small crack in the dough hook. I contacted support and they were quick to resolve the issue. Overall I love the mixer. I would love if they added removable bowl and another speed. Otherwise awesome for donuts and pizza.

The mixer works great, well built and quality of materials. Not easy to clean the bowl after use, we wish there was a better option to remove the bowl and clean it. Maybe add another speed to the mixing options will be great.

Home Baker

This is an excellent value for making bread dough. I wondered if a true offset spiral mixer would do a better job of developing dough than a stand mixer with a dough hook. So far the answer is a solid "yes." I've tested it on * High-hydration dough--around 85% hydration using the double hydration method * Low-hydration dough--bagel dough using 14% protein flour and 57% hydration * Inclusions--one with raisins, one with cooked diced onion * Highly enriched dough--brioche dough with 40% butter, 10% oil In all cases the mixer mixed the dough without strain, developed a smooth windowpane quickly and thoroughly, and mixed all ingredients uniformly. It worked on a batch with only 500 g of flour. The specs say it goes down to 250 g, but I would be hesitant to go below 500 g. I suspect that this mixer's "sweet spot" is 1,000 g and above. It would be nice if the mixer had a removeable bowl, reverse, more than one speed. But at this price point it's fine. However...note that the mixer had significant quality control issues: * The safety cage was misadjusted so that I could not raise it. Even I was able to fix this easily. * The mixer had no power when it arrived. It just made a horrible grinding sound. Their technical support (which I could only reach by email, I couldn't reach directly...had to have my messages relayed by a customer service representative, and seemed to not be staffed by people who spoke English as a first language) instructed me to open the machine. Open the machine?! Bakers shouldn't have to do that! Once inside even I could see that the belt that transfers power from the motor to the gears was loose. In fact, it was at the very loosest setting. That means that NO ONE adjusted this before it went out to the customer. It was a bit challenging for me to fix this, but I was able to in time. And since then...it has worked flawlessly. I am not anticipating any additional problems. Also note that the mixer arrived about 5 days later than the website listed. But that's not a huge problem. Finally note that the listed price has been raised by $75 (15%) in just the last 4 weeks. So watch the price on this item. It may go up or down. And watch for coupon codes (using something like the Honey browser add-on). I waited until a 10% off coupon briefly activated.

Beware VEVOR's shipping baiting if planning for event
"Get it as soon as Tue". Entered delivery address, indicated as "Delivery Tue". Wed would still be fine, so went ahead with order and paid. Still hadn't arrived by Wednesday. Now too late for an event. Customer support simply didn't care about the deceptive advertising - just pointed to the small print in their shipping policy. Wouldn't have bought it if didn't bait with a firm delivery date. No free "doesn't match description" return because late delivery is outside Vevor's control. Features - only thing really missing is two speed modes. Non-removable bowl and lack of reverse I'm fine with.
